I recently started reading MamaPea at Peas and Thank You . She had posted a recipe of what she calls the "crack wrap" which is basically a hummus burrito with vegan cheese and butter. It was super easy and looked yummy enough that I had to try.
Of course I am not vegan so I used one of my favorite cheese's Feta, and instead of "burrito style" I just did a basic quesadilla and skipped the butter all together. I can see where it gets the name because I am loving it. Thanks MamaPea, I plan on trying out some of your other recipes. This has been my go-to lunch for the week. Ooh, yay, I'm glad you loved it! Before I was vegan, I'd make it with processed swiss cheese slices. Holy heck, almost makes me wish I did dairy still. Enjoy!!!
Yum! I'm looking for every possible way to cook feta at the moment, and I hadn't thought of quesadilla type things! Thanks for the inspiration.
